Thai Beef Stir Fry

This is a fresh and light dish that will take you less than 30 minutes to prepare. Make sure you use thai basil instead of normal basil as this really makes the dish and gives it a beautiful aniseed flavor.

Thai Beef Stir Fry

Ingredients

1 onion, finely diced

1 knob fresh ginger, finely diced

1 red chili, finely diced

1 zucchini, finely diced

½ red capsicum, finely diced

1 tbs olive oil

500g beef mince

2 tbs tamari sauce

2 tbs fish sauce

Handful snow peas, sliced

1 bunch thai basil

1 cos lettuce

Instructions

Heat the olive oil in a large fry pan over a medium heat.

Add the onion, ginger, chili, zucchini and red capsicum, cook these for 10 minutes until they have softened.

Add the beef mince, tamari sauce and fish sauce, and cook for a further 15 minutes.

Remove from the heat and stir through the snow peas and thai basil leaves.

Serve alongside cos lettuce leaves and top with extra fresh ginger, chili and thai basil leaves.
