This frittata is going to provide you with everything you need from a meal in just 1 slice. It’s packed full of protein, carbohydrates, good fats and a healthy serve of vegetables. I’ll often make this on a Sunday afternoon in preparation for the week ahead. A slice of this is great for any meal of the day and fits perfectly into kid’s lunchboxes. Don’t let my vegetable suggestion hold you back, if you don’t have broccoli or you don’t like it simply replace it with any other vegetable, such as cauliflower, zucchini, capsicum etc.
What you’ll need:
½ large sweet potato or 1 small sweet potato
1 red onion, roughly sliced
1 cup of chopped broccoli
salt and pepper
50g tasty cheese, grated (optional)
How to put this all together:
Preheat the oven to 200 degrees.
Chop the sweet potato into large cubes and place into a medium ceramic dish, drizzle with olive oil and season with salt and pepper. Roast these in the oven for 30 minutes. Remove from the oven, add the broccoli and red onion and return to the oven for another 15 minutes. While this is cooking beat the 8 eggs in a large bowl and put aside.
After 15 minutes remove the dish from the oven, pour over the beaten eggs and sprinkle with some grated tasty cheese. Return to the oven to cook for a further 30 minutes. You’ll know it’s done when the top has gone golden brown and the egg has puffed up.
I like to serve this with some sliced avocado and a handful of rocket just to get that extra hit of greens.
