Mango & Grilled Corn Salsa

Serves: 4 people

Dairy free, gluten free and vegetarian

Mango and corn may seem like an unusual combination, but trust me it really works. Serve this on top of the Black Bean Beef Mince Tacos, which can be found here.

What you’ll need:

  • 3 corn cobs
  • 1 tbs ghee
  • 1 mango, peeled and diced
  • ½ red capsicum, finely diced
  • ¼ red onion, finely diced
  • ½ cup fresh coriander, roughly chopped
  • Juice from 1 lime
  • 1 tbs extra virgin olive oil
  • ½ tsp sea salt

How to put this all together:

Heat the ghee in a large fry pan over a high heat. Add the corn cobs and cook them for 10 minutes. Make sure the heat is high and you continue to turn the corn cobs. Remove from the pan and allow to cool before cutting off the corn from the cob. Add the corn to a bowl along with all of the remaining ingredients.
